Slow Cooker Chicken Pot Pie


4 chicken breasts

2 cups broth (gluten free)

2 cups rice, cooked

2 cups dairy free milk (unsweetened)

1 onion, finely diced

1-2 cups frozen peas & carrots

1 tsp salt

1 tsp salt

optional: celery or potatoes


  1. Place chicken & broth in a slow cooker. Cook on high for 4 hours. Spread with a fork

  2. Add in remaining ingredients, stir until combined. Cook on high for 1 hour

  3. Add more salt, pepper or chili flakes if desired based on preference
